Description

This High Protein Crispy Garlic Chicken Fried Rice features tender chicken, fragrant garlic, and colorful veggies, all tossed with perfectly crispy jasmine rice for an unforgettable taste sensation.


Ingredients

  • 1 cup jasmine rice
  • 2 tablespoons vegetable oil, divided
  • 3 large eggs, beaten
  • 1 lb boneless, skinless chicken breast, diced
  • Salt and black pepper to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 4 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 green onions, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh cilantro, chopped (for garnish)


Instructions

  1. Cook jasmine rice according to package instructions. Spread on a baking sheet to cool slightly for crispy texture.
  2. Heat 1 tbsp vegetable oil in a large pan or wok over medium heat. Add beaten eggs and scramble gently until just set. Remove eggs and set aside.
  3. Add remaining 1 tbsp oil and increase heat to medium-high. Add diced chicken, season with salt and pepper, stir-fry until golden and cooked through, about 5 minutes.
  4. Add minced garlic, stir-fry 1 minute without burning.
  5. Stir in mixed vegetables and cook 2–3 minutes until tender.
  6. Add cooked rice, then pour in soy sauce, oyster sauce, and fish sauce. Mix well.
  7. Return scrambled eggs to pan, breaking up slightly and folding into rice.
  8. Toss in chopped green onions and sesame oil, cooking 1–2 more minutes.
  9. Garnish with fresh cilantro before serving.

  • Marinate chicken in soy sauce, garlic, and ginger for extra flavor.
  • Ensure rice is slightly dried by refrigerating for a few hours if needed.
