Description

Iowa Party Bites are crunchy tortilla chips filled with a cheesy, corn and green chile mixture. Perfect for parties or a fun snack for 6 servings.


Ingredients

  • 1 10 oz bag Tostitos Scoops tortilla chips
  • 1 8 oz block cream cheese, softened
  • 8 oz shredded mozzarella cheese
  • 1 large egg
  • 1 15 oz can sweet corn, drained
  • 1 4 oz can green chiles (mild or medium)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese for topping


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Prepare baking sheets by lightly greasing them or lining with parchment paper. Arrange the tortilla chips on the sheets, cup side up.
  3. In a large bowl, combine cream cheese, mozzarella, egg, corn, green chiles, garlic powder, salt, and black pepper until well mixed.
  4. Fill each chip with about 1 tablespoon of the mixture.
  5. Sprinkle Parmesan cheese over the tops of the filled chips.
  6. Bake for 13-15 minutes, or until the tops are golden and the cheese is bubbling.
  7. Serve warm and enjoy!

Notes

  • For extra flavor, you can add a pinch of smoked paprika or chili powder to the cheese mixture.
