This Juicy Garlic Parmesan Chicken Meatloaf is a tender and flavorful twist on the classic dish, perfect for cozy family dinners.


Ingredients

  • 2 pounds ground chicken (or turkey or lean pork)
  • 1 cup Parmesan cheese, shredded (or Romano)
  • 1 cup Panko breadcrumbs (or regular breadcrumbs)
  • 2 large eggs
  • 4 cloves minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup whole milk (or plant milk)
  • 2 tablespoons unsalted butter (for glaze)
  • ¼ cup additional Parmesan (for sprinkling)
  • 2 tablespoons fresh parsley (for garnish)


Instructions

  1. Preheat oven to 190°C (375°F). Prepare a baking sheet with parchment or grease a loaf pan.
  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk. Mix gently until just combined.
  3. Form mixture into a loaf and transfer to prepared baking sheet or loaf pan.
  4. Bake 40–45 minutes or until internal temperature reaches 74°C (165°F).
  5. While baking, melt butter in a saucepan over medium heat, add minced garlic, sauté until fragrant, then mix in additional Parmesan and parsley, cooking until slightly thickened.
  6. Brush glaze over meatloaf and return to oven 5–7 minutes.
  7. Let meatloaf rest 5 minutes, slice, and garnish with extra parsley before serving.
