This Juicy Garlic Parmesan Chicken Meatloaf is a tender and flavorful twist on the classic dish, perfect for cozy family dinners.
Ingredients
- 2 pounds ground chicken (or turkey or lean pork)
- 1 cup Parmesan cheese, shredded (or Romano)
- 1 cup Panko breadcrumbs (or regular breadcrumbs)
- 2 large eggs
- 4 cloves minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup whole milk (or plant milk)
- 2 tablespoons unsalted butter (for glaze)
- ¼ cup additional Parmesan (for sprinkling)
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Preheat oven to 190°C (375°F). Prepare a baking sheet with parchment or grease a loaf pan.
- In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk. Mix gently until just combined.
- Form mixture into a loaf and transfer to prepared baking sheet or loaf pan.
- Bake 40–45 minutes or until internal temperature reaches 74°C (165°F).
- While baking, melt butter in a saucepan over medium heat, add minced garlic, sauté until fragrant, then mix in additional Parmesan and parsley, cooking until slightly thickened.
- Brush glaze over meatloaf and return to oven 5–7 minutes.
- Let meatloaf rest 5 minutes, slice, and garnish with extra parsley before serving.
