Ingredients

  • For the Bites:
  • 1 cup cottage cheese (or substitute Greek yogurt)
  • 1 cup fresh blueberries (frozen can be used)
  • 1 tbsp lemon zest (fresh preferred)
  • 2 tbsp honey (or agave syrup for vegan)
  • 1 cup almond flour (or coconut flour for lower-carb)
  • 1 tsp vanilla extract (pure)
  • 1 pinch salt
  • Optional Toppings:
  • 1 tbsp additional honey
  • 1/2 cup extra blueberries for garnish


Instructions

  1. In a mixing bowl, gently combine cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and a pinch of salt. Do not mash the blueberries.
  2. Scoop tablespoon-sized portions of the mixture and roll into balls. Place them on a parchment-lined baking sheet, leaving space between each.
  3. Preheat oven to 350°F (175°C) and bake bites for 10-12 minutes until lightly firm and golden.
  4. Allow bites to cool slightly. Drizzle with additional honey and top with extra blueberries if desired.
