A creamy and flavorful Lemon Garlic Shrimp Risotto, perfect for seafood lovers.
Ingredients
- 1 lb raw shrimp, peeled and deveined
- 4 cups chicken or vegetable broth
- ½ cup dry white wine
- 1 tablespoon fresh lemon juice
- 4 tablespoons unsalted butter, divided
- ½ cup freshly grated Parmesan cheese
- ½ medium onion or 1 large shallot, finely chopped
- 4–5 garlic cloves, minced
- Zest of 1 lemon
- 1 tablespoon fresh parsley, chopped
- 1 cup Arborio rice
- ¼ teaspoon crushed red pepper flakes
- Salt and black pepper, to taste
Instructions
- Prepare shrimp and set aside.
- Bring broth to a gentle simmer and keep warm.
- Melt 2 tablespoons butter and sauté onion until soft.
- Add rice and toast for 2–3 minutes.
- Pour in wine and stir until absorbed.
- Add broth one ladle at a time, stirring until absorbed, for 25–30 minutes.
- Remove from heat and stir in remaining butter, lemon juice, zest, and Parmesan.
- Sauté shrimp with garlic, red pepper flakes, salt, and pepper until cooked.
- Serve risotto topped with shrimp and parsley.
