Description

A creamy and flavorful Lemon Garlic Shrimp Risotto, perfect for seafood lovers.


Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 4 cups chicken or vegetable broth
  • ½ cup dry white wine
  • 1 tablespoon fresh lemon juice
  • 4 tablespoons unsalted butter, divided
  • ½ cup freshly grated Parmesan cheese
  • ½ medium onion or 1 large shallot, finely chopped
  • 45 garlic cloves, minced
  • Zest of 1 lemon
  • 1 tablespoon fresh parsley, chopped
  • 1 cup Arborio rice
  • ¼ teaspoon crushed red pepper flakes
  • Salt and black pepper, to taste


Instructions

  1. Prepare shrimp and set aside.
  2. Bring broth to a gentle simmer and keep warm.
  3. Melt 2 tablespoons butter and sauté onion until soft.
  4. Add rice and toast for 2–3 minutes.
  5. Pour in wine and stir until absorbed.
  6. Add broth one ladle at a time, stirring until absorbed, for 25–30 minutes.
  7. Remove from heat and stir in remaining butter, lemon juice, zest, and Parmesan.
  8. Sauté shrimp with garlic, red pepper flakes, salt, and pepper until cooked.
  9. Serve risotto topped with shrimp and parsley.
