Description
Bright, refreshing, and protein-packed lemon poppy seed energy bites made with plant-based protein powder, oats, and fresh lemon juice. No baking required and perfect for meal prep snacks.
Ingredients
- 3 scoops (90g) vanilla plant-based protein powder
- ½ cup (50g) old-fashioned rolled oats (gluten-free if needed)
- 1 tbsp (9g) poppy seeds
- ½ tbsp (7g) Truvia (or granulated sweetener of choice)
- 1 tsp freshly grated lemon zest
- 6 tbsp (90mL) freshly squeezed lemon juice
- 6 tbsp (90mL) water
Instructions
- In a large bowl, combine protein powder, oats, poppy seeds, sweetener, and lemon zest.
- Add lemon juice and water. Stir until fully incorporated and a dough forms.
- Shape mixture into 28 small balls.
- Place in an airtight container and refrigerate until ready to eat.
Notes
- This recipe works best with plant-based protein powder. Whey protein is not recommended.
- If dough is too wet, add more protein powder. If too dry, add a little more water.
- Instant oats may be substituted for rolled oats. Do not use steel-cut oats.
- Poppy seeds may be omitted if desired.
- Liquid sweeteners can replace Truvia; reduce water slightly if using.
- For stronger lemon flavor, add zest from a second lemon.
