Description

These Lobster Tartlets are perfect bite-sized appetizers for a cocktail party or family dinner. Topped with chives or green onions, they are colorful, flavorful, and easy to make. —Lorraine Caland, Shuniah, Ontario


Ingredients

  • 1/2 cup shredded white cheddar cheese
  • 1/2 cup shredded provolone cheese
  • 1/2 cup cooked lobster meat, chopped, or 1 can (6-1/2 ounces) flaked lobster meat, drained
  • 1/3 cup finely chopped sweet red pepper
  • 2 tablespoons finely chopped green onion (white portion only)
  • 2 tablespoons mayonnaise
  • Dash seafood seasoning
  • 2 packages (1.9 ounces each) frozen miniature phyllo tart shells
  • Paprika, optional


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine cheddar cheese, provolone cheese, lobster meat, red pepper, green onion, mayonnaise, and seafood seasoning.
  3. Spoon mixture into tart shells and place filled shells on an ungreased baking sheet.
  4. Bake 12–15 minutes, until shells are lightly browned and filling is heated through.
  5. If desired, sprinkle with paprika before serving.

Notes

  • Use fresh lobster for best flavor, but canned lobster works well too.
  • Top with chives or green onions for added color.
  • Mini phyllo tart shells can be found in the frozen section of most grocery stores.
