Ingredients
- 1 lb breakfast sausage
- 4 large eggs
- Salt and pepper to taste
- 1 package puff pastry
- 1 cup cheddar cheese
Instructions
- Preheat oven according to puff pastry package instructions (usually 400°F / 200°C).
- Cook sausage in a skillet over medium heat until browned. Drain excess fat.
- Beat eggs with salt and pepper, scramble lightly until just set, then remove from heat.
- Roll out puff pastry and cut into 8 squares. Place sausage, eggs, and cheddar in the center of each.
- Fold pastry over filling to form hand pies and seal edges. Optionally brush with egg wash.
- Bake 15–20 minutes until golden and puffed.
- Serve warm.
