Description

Ingredients

  • 2 chicken breasts or thighs
  • 1 cup long-grain rice (uncooked)
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp butter
  • 1 tbsp oil
  • ½ cup grated cheese (cheddar or mozzarella)
  • Salt, black pepper, paprika (to taste)
  • Optional: mushrooms, spinach, or peas


Instructions

  1. Sear the chicken: Heat oil and butter in a large pan. Season chicken with salt, pepper, and paprika. Sear 3–4 minutes per side until golden. Remove and set aside.
  2. Build the base: In the same pan, sauté onion and garlic until soft and fragrant.
  3. Add rice: Stir in uncooked rice and toast for 1–2 minutes.
  4. Add liquids: Pour in chicken broth and milk/cream. Stir and bring to a gentle simmer.
  5. Cook together: Return chicken to the pan. Cover and cook on low heat for 18–20 minutes until rice is tender and chicken is cooked through.
  6. Make it creamy: Add cheese and stir gently until melted and creamy.
