Description

Overnight Baked Banana French Toast Casserole is an easy make-ahead breakfast & is FULL of banana flavor! A huge hit in the family.


Ingredients

  • Casserole: 1 lb sourdough or French bread (cut into chunks)
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • ½ cup heavy whipping cream
  • ½ cup sugar
  • ¼ cup light brown sugar, unpacked
  • 2 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • 6-7 medium bananas, chopped
  • Streusel Topping: ¾ cup all-purpose flour
  • ¾ cup brown sugar, firmly packed
  • 1 tsp cinnamon
  • ½ cup unsalted butter, cut into pieces


Instructions

  1. Grease a 9×13 inch casserole dish.
  2. Add bread chunks to a large bowl and set aside.
  3. Whisk eggs, milk, cream, sugars, vanilla, and cinnamon in another bowl.
  4. Pour egg mixture over bread and add chopped bananas; gently stir to combine.
  5. Pour mixture into casserole dish, spread evenly, cover, and refrigerate overnight.
  6. Preheat oven to 350°F (176°C) and bake for 35-40 minutes until desired doneness.
  7. Prepare streusel by combining dry ingredients, then cutting in butter until crumbly.
  8. Remove casserole from oven, crumble streusel over top, and bake 5 more minutes.
  9. Serve warm with syrup.

  • Sliced bananas can be cut into quarters for even distribution.
