Description
Overnight Baked Banana French Toast Casserole is an easy make-ahead breakfast & is FULL of banana flavor! A huge hit in the family.
Ingredients
- Casserole: 1 lb sourdough or French bread (cut into chunks)
- 8 large eggs
- 2 cups milk (whole or 2%)
- ½ cup heavy whipping cream
- ½ cup sugar
- ¼ cup light brown sugar, unpacked
- 2 tsp vanilla extract
- 1½ tsp ground cinnamon
- 6-7 medium bananas, chopped
- Streusel Topping: ¾ cup all-purpose flour
- ¾ cup brown sugar, firmly packed
- 1 tsp cinnamon
- ½ cup unsalted butter, cut into pieces
Instructions
- Grease a 9×13 inch casserole dish.
- Add bread chunks to a large bowl and set aside.
- Whisk eggs, milk, cream, sugars, vanilla, and cinnamon in another bowl.
- Pour egg mixture over bread and add chopped bananas; gently stir to combine.
- Pour mixture into casserole dish, spread evenly, cover, and refrigerate overnight.
- Preheat oven to 350°F (176°C) and bake for 35-40 minutes until desired doneness.
- Prepare streusel by combining dry ingredients, then cutting in butter until crumbly.
- Remove casserole from oven, crumble streusel over top, and bake 5 more minutes.
- Serve warm with syrup.
Notes
- Sliced bananas can be cut into quarters for even distribution.
