Description

Overnight Baked Banana French Toast Casserole is a make-ahead breakfast made with ripe bananas, creamy custard, and a buttery streusel topping—perfect for brunch or special mornings.


Ingredients

  • 1 lb sourdough or French bread, cut into chunks
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • ½ cup heavy whipping cream
  • ½ cup sugar
  • ¼ cup light brown sugar
  • 67 medium ripe bananas, chopped
  • ¾ cup all-purpose flour (streusel)
  • ¾ cup packed brown sugar (streusel)
  • ½ cup salted butter (streusel)


Instructions

  1. Grease a 9×13-inch casserole dish.
  2. In a large bowl, combine bread chunks with chopped bananas.
  3. In another bowl, whisk together eggs, milk, cream, sugars, vanilla extract, and cinnamon.
  4. Pour egg mixture over bread and bananas, stirring gently to coat.
  5. Transfer to prepared dish, cover, and refrigerate overnight.
  6. Preheat oven to 350°F (176°C). Bake for 35–40 minutes until golden.
  7. Combine streusel ingredients and crumble over casserole during the last 5 minutes of baking.
  8. Serve warm with maple syrup or desired toppings.
