Description

Pepperoncini Chicken Skillet is a bold, tangy, and buttery one-pan meal packed with flavor—perfect for an easy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 3/4 cup pepperoncini peppers
  • 1/4 cup pepperoncini juice
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp butter
  • Fresh parsley, chopped (optional)


Instructions

  1. Pat chicken dry and season both sides with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic for 1 minute until fragrant. Add chicken broth and pepperoncini juice, scraping up browned bits.
  4. Stir in pepperoncini peppers, then return chicken to skillet. Reduce heat, cover, and simmer 10–12 minutes until fully cooked.
  5. Add butter and let it melt into the sauce. Spoon sauce over the chicken.
  6. Garnish with fresh parsley and serve hot.

  • Great served with rice, mashed potatoes, or crusty bread.
  • Use chicken thighs for extra juiciness.
  • Add extra pepperoncini juice for a tangier flavor.
