Ingredients

  • 1 lb breakfast sausage
  • 4 large eggs
  • Salt and pepper to taste
  • 1 package puff pastry
  • 1 cup cheddar cheese


Instructions

  1. Preheat oven according to puff pastry package instructions (usually 400°F / 200°C).
  2. Cook sausage in a skillet over medium heat until browned and cooked through. Drain excess fat.
  3. Beat eggs with salt and pepper, then scramble lightly in a skillet until just set. Remove from heat.
  4. Roll out puff pastry and cut into 8 squares. Place a portion of sausage, eggs, and cheddar in the center of each square.
  5. Fold pastry over filling to form hand pies, pressing edges to seal. Optionally brush with an egg wash for golden color.
  6. Bake according to puff pastry package instructions, usually 15–20 minutes, until golden and puffed.
  7. Serve warm.
