Rotel Pasta Fiesta combines creamy, cheesy Tex-Mex flavors with pasta for a quick, satisfying, and crowd-pleasing dinner.
Ingredients
- 12 oz pasta (penne or rotini)
- 1 lb ground beef or turkey
- 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon taco seasoning
- ½ teaspoon garlic powder
- Salt and pepper, to taste
- Fresh cilantro or parsley (optional, for garnish)
Instructions
- Boil pasta in salted water according to package instructions. Drain and set aside.
- In a large skillet, cook ground beef or turkey over medium heat until fully browned. Drain excess grease.
- Stir in Rotel tomatoes, heavy cream, taco seasoning, garlic powder, salt, and pepper. Simmer for 5 minutes.
- Add cooked pasta to the skillet and toss to coat. Stir in cheddar cheese until melted and creamy.
- Garnish with fresh cilantro or parsley if desired and serve hot.

- Make Ahead: Cook pasta and brown meat in advance. Store separately up to 2 days.
