Description

Rotel Pasta Fiesta combines creamy, cheesy Tex-Mex flavors with pasta for a quick, satisfying, and crowd-pleasing dinner.


Ingredients

  • 12 oz pasta (penne or rotini)
  • 1 lb ground beef or turkey
  • 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon taco seasoning
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh cilantro or parsley (optional, for garnish)


Instructions

  1. Boil pasta in salted water according to package instructions. Drain and set aside.
  2. In a large skillet, cook ground beef or turkey over medium heat until fully browned. Drain excess grease.
  3. Stir in Rotel tomatoes, heavy cream, taco seasoning, garlic powder, salt, and pepper. Simmer for 5 minutes.
  4. Add cooked pasta to the skillet and toss to coat. Stir in cheddar cheese until melted and creamy.
  5. Garnish with fresh cilantro or parsley if desired and serve hot.
