Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 2 cups fresh spinach, chopped
- 1 tsp garlic powder
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp fresh lemon juice
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C). Carefully cut pockets into each chicken breast.
- In a bowl, mix cream cheese, spinach, mozzarella, garlic powder, and Italian seasoning until well combined.
- Stuff each chicken breast with the mixture and secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 3–4 minutes per side until golden brown.
- Pour chicken broth around the chicken and drizzle with lemon juice. Bake uncovered for 25–30 minutes until internal temperature reaches 165°F (75°C).
- Sprinkle Parmesan cheese over the chicken immediately after removing from oven. Let rest 5 minutes before serving.
