Ingredients
- 2 medium sweet potatoes, peeled and grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil (or avocado oil)
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt and pepper, to taste
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Grate sweet potatoes and squeeze out excess moisture using a clean towel.
- In a large bowl, mix grated sweet potatoes, onion, garlic, smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Form small patties from the mixture and cook 3–4 minutes per side until golden and crispy.
- Transfer cooked hash browns to a plate lined with paper towels to drain excess oil.
- Garnish with fresh parsley and serve immediately with your favorite breakfast sides.
- Optional: finish under a broiler for 1–2 minutes per side for extra crispiness.
