Ingredients
- For the Chicken:
- 1 ½ lbs (680 g) boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper to taste
- For the Taco Filling:
- 8 small tortillas (flour or corn)
- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ½ cup shredded cheese
- ¼ cup chopped cilantro
- Lime wedges for serving
- Optional Toppings:
- Sour cream
- Salsa or pico de gallo
- Avocado slices
Instructions
- Cook the Chicken: In a pot or slow cooker, add chicken breasts, chicken broth, and seasonings. Cook over medium heat for 20–25 minutes (or 3–4 hours on low in a slow cooker), until chicken is tender and cooked through.
- Shred the Chicken: Remove chicken and shred using two forks. Return the shredded chicken to the pot and stir to coat with the remaining juices for extra flavor.
- Assemble the Tacos: Warm the tortillas. Add shredded chicken, lettuce, tomatoes, cheese, and cilantro. Squeeze lime juice over the top and add your favorite toppings.
- Serve & Enjoy: Serve immediately and enjoy your easy, flavorful tacos!
