Description
A hearty cowboy casserole with tender beef, beans, corn, diced tomatoes, and a crispy tater tot topping, finished with melted cheddar cheese. Perfect for family dinners and easy meal prep.
Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes with green chilies, undrained
- 1 can (8 oz) tomato sauce
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and black pepper, to taste
- 2 cups shredded sharp cheddar cheese
- 1 bag (30 oz) frozen tater tots
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Brown ground beef in a skillet over medium heat for 5-7 minutes; drain excess grease.
- Add diced onion and garlic to beef; sauté 3-4 minutes until onion is translucent.
- In a 6-quart slow cooker, combine beef mixture with black beans, corn, diced tomatoes with juice, tomato sauce, chili powder, cumin, paprika, salt, and pepper; stir well.
- Layer frozen tater tots evenly on top of the mixture in the slow cooker.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- About 30 minutes before serving, sprinkle shredded cheddar cheese over tater tots, cover, and allow to melt.
- Serve warm, garnished with chopped cilantro if desired.
