This Slow Cooker Creamy Sausage & Tortellini Soup is the ultimate cold-weather comfort food—loaded with savory sausage, tender vegetables, pillowy tortellini, and a rich, creamy broth.
Ingredients
- 1 lb ground Italian sausage, browned
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 tbsp Italian seasoning
- 2 tsp beef or chicken bouillon
- ½ tsp salt
- 4 cups broth (beef, chicken, or vegetable)
- ¼ cup cornstarch mixed with ¼ cup water
- 36 oz evaporated milk or half-and-half
- 12 oz cheese tortellini (fresh or dried)
- 5 cups baby spinach
- 1 cup milk, plus more as needed
- Salt and pepper, to taste
Instructions
- Add browned sausage, onion, carrots, celery, garlic, seasoning, bouillon, salt, and broth to the slow cooker.
- Cook on LOW for 7–8 hours or HIGH for 4 hours.
- Skim excess fat from the top if needed.
- Whisk in cornstarch slurry and evaporated milk or half-and-half.
- Add tortellini, cover, and cook on HIGH for 45 minutes until thickened.
- Stir in spinach and cook 5–10 minutes until wilted.
- Add 1 cup milk, plus more as needed for desired creaminess.
- Season with salt and pepper and serve warm.
Notes
- Substitute ground chicken, turkey, or beef for sausage if desired.
- Serve with crusty bread for a complete meal.
- Leftovers thicken—add broth or milk when reheating.
