Ingredients
- Beef & Potatoes:
- 1 ½ lbs beef stew meat or sirloin chunks
- 1 ½ lbs baby potatoes, halved
- 3 tbsp butter, melted
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- ½ tsp onion powder
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the Ingredients: Place the beef chunks and halved baby potatoes into the slow cooker.
- Make the Garlic Butter Sauce: In a small bowl, whisk together melted butter, olive oil, minced garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper.
- Combine Everything: Pour the garlic butter mixture over the beef and potatoes. Stir well to coat evenly.
- Slow Cook: Cover and cook on LOW for 6 hours or HIGH for 3–4 hours, until beef is tender and potatoes are soft.
