Description

Tender, juicy, and full of buttery garlic flavor, these Slow Cooker Garlic Butter Beef Bites with Potatoes are the ultimate comfort food. The beef slow-cooks to perfection, soaking up rich garlic-herb butter while the potatoes become melt-in-your-mouth tender. A cozy, low-effort dinner that’s perfect for busy nights!

Ingredients

  • Beef & Potatoes:
  • 1 ½ lbs beef stew meat or sirloin chunks
  • 1 ½ lbs baby potatoes, halved
  • 3 tbsp butter, melted
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Place the beef chunks and halved baby potatoes into the slow cooker.
  2. Make the Garlic Butter Sauce: In a small bowl, whisk together melted butter, olive oil, minced garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper.
  3. Combine Everything: Pour the garlic butter mixture over the beef and potatoes. Stir well to coat evenly.
  4. Slow Cook: Cover and cook on LOW for 6 hours or HIGH for 3–4 hours, until beef is tender and potatoes are soft.
  5. Finish & Serve: Adjust seasoning if needed. Sprinkle with fresh parsley before serving. Serve with crusty bread or veggies!

Notes

  • Use sirloin or chuck roast for best flavor and tenderness.
  • Add carrots or mushrooms for a heartier version.
  • For extra buttery richness, stir in 1 tbsp of butter just before serving.
  • Leftovers keep well refrigerated for up to 3 days.
