This Easy Smothered Chicken Recipe is pure Southern comfort food! Tender chicken breasts are pan-seared, then simmered in a rich, creamy onion gravy that’s better than grandma’s. Perfect over mashed potatoes, rice, or biscuits!


Ingredients

  • For the Chicken:
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt & black pepper to taste
  • 2 tbsp all-purpose flour (for coating)
  • 2 tbsp olive oil or butter
  • For the Gravy:
  • 2 tbsp butter
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 ½ cups chicken broth
  • ½ cup heavy cream (or milk)
  • ½ tsp thyme (optional)
  • Salt & pepper to taste
  • For Serving:
  • Fresh parsley for garnish
  • Mashed potatoes or rice


Instructions

  1. Prepare the Chicken: Season chicken with garlic powder, onion powder, paprika, salt, and pepper. Lightly coat each piece with flour.
  2. Sear the Chicken: Heat olive oil or butter in a skillet over medium heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  3. Make the Gravy: In the same skillet, melt butter. Add sliced onions and cook until softened. Stir in garlic and cook for 30 seconds. Sprinkle in flour and stir for 1 minute to form a roux. Slowly whisk in chicken broth, then add heavy cream and thyme. Simmer until thickened.
  4. Combine & Simmer: Return the chicken to the skillet and spoon gravy over the top. Simmer on low for 10–15 minutes until chicken is tender and fully coated.
  5. Serve & Enjoy: Garnish with parsley and serve over mashed potatoes, rice, or biscuits for the ultimate comfort meal.

Notes

  • For extra richness, use chicken thighs instead of breasts.
  • Add mushrooms or bell peppers to the gravy for more flavor.
  • Pairs beautifully with garlic mashed potatoes or buttered rice.
