Description
A bold and spicy taco pasta loaded with seasoned ground chicken, beans, peppers, and melty cheddar cheese. A perfect one-pot comfort meal with Tex-Mex flavors.
Ingredients
- 1 tbsp olive oil
- 1 lb ground chicken
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1.5 tbsp chili powder
- 2 tsp cumin
- 3/4 tsp oregano
- 1/2 tsp smoked paprika
- 3/4 tsp salt
- 1/2 tsp black pepper
- 16 oz water
- 1.25 cup salsa
- 8 oz tomato sauce
- 1.5 cups pasta (rotini or penne)
- 15 oz black beans
- 1.25 cup cheddar cheese
- Avocado, diced (optional topping)
- Greek yogurt (optional topping)
- Cilantro (optional topping)
- Jalapeño (optional topping)
- Lime wedges (optional topping)
Instructions
- Prep ingredients: dice onion and bell peppers, and mince garlic. In a small bowl, mix chili powder, cumin, oregano, smoked paprika, salt, and black pepper.
- Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned, breaking it apart as it cooks.
- Add onion and bell peppers. Cook for 3-4 minutes until softened, then stir in garlic and cook for 1 minute.
- Sprinkle in the spice mix and stir well to coat the chicken and vegetables evenly.
- Add water, salsa, tomato sauce, and pasta. Stir to combine and bring to a boil.
- Reduce heat to a simmer, cover, and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
- Stir in black beans and cheddar cheese until melted and creamy.
- Serve hot with desired toppings like avocado, yogurt, cilantro, jalapeño, and lime wedges.
Notes
- Adjust spice level by adding more or less chili powder.
- Use ground beef instead of chicken for a richer flavor.
