Description

This light and fluffy whipped strawberry mousse recipe by Katie Higgins is a perfect dessert for almost any occasion.


Ingredients

  • 8 oz cream cheese or coconut cream
  • 4 oz yogurt or additional cream cheese or coconut cream
  • 1 cup powdered sugar or sugar free alternative
  • 5 medium size strawberries
  • Optional 1/4 tsp vanilla bean paste


Instructions

  1. If using cream cheese, let it come to room temperature. If using coconut cream, open the can to make sure its contents are thick and creamy.
  2. Remove stems from the strawberries and blend or mash until pureed.
  3. Add all remaining ingredients, and blend until completely smooth using a food processor, blender, or hand mixer.
  4. Transfer to serving dishes and refrigerate. The mousse will thicken considerably as it chills.

Notes

  • On rare occasions, a can of coconut cream may be hard and flaky; those will not work well for mousse.
