Ingredients
- 4 boneless, skinless chicken thighs
- 1/2 tsp garlic powder
- 1/4 cup red onion, diced
- 1 cup sweet corn kernels
- 1 lime, juice and wedges
- 2 tbsp mayonnaise
- 3 cups cooked rice
- 1 tbsp avocado oil
- 1/4 tsp black pepper
- 2 tsp chili powder
- 1/2 tsp salt
- Salt and pepper to taste
- 1/2 cup Cotija cheese
- 1/2 cup sour cream
Instructions
- Cook Chicken: Season chicken thighs with garlic powder, salt, pepper, and chili powder. Heat avocado oil in a skillet over medium-high heat and cook chicken until golden and fully cooked, about 5-7 minutes per side.
- Prepare Corn Mix: In a bowl, combine sweet corn, red onion, mayonnaise, lime juice, and a pinch of salt and pepper.
- Assemble Bowls: Place cooked rice in serving bowls. Top with cooked chicken and corn mixture.
- Finish & Serve: Sprinkle with Cotija cheese and add sour cream dollops. Serve with lime wedges.
