Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/2 tsp garlic powder
  • 1/4 cup red onion, diced
  • 1 cup sweet corn kernels
  • 1 lime, juice and wedges
  • 2 tbsp mayonnaise
  • 3 cups cooked rice
  • 1 tbsp avocado oil
  • 1/4 tsp black pepper
  • 2 tsp chili powder
  • 1/2 tsp salt
  • Salt and pepper to taste
  • 1/2 cup Cotija cheese
  • 1/2 cup sour cream


Instructions

  1. Cook Chicken: Season chicken thighs with garlic powder, salt, pepper, and chili powder. Heat avocado oil in a skillet over medium-high heat and cook chicken until golden and fully cooked, about 5-7 minutes per side.
  2. Prepare Corn Mix: In a bowl, combine sweet corn, red onion, mayonnaise, lime juice, and a pinch of salt and pepper.
