Ingredients

- 2 tbsp extra virgin olive oil
- For the Topping:
- 1 medium jalapeño pepper, sliced
- 1 cup fresh raspberries
Instructions
- Season chicken with salt, pepper, and chili powder.
- Sear chicken in olive oil over medium-high heat until golden and cooked through.
- In a bowl, mix raspberry preserves, olive oil, soy sauce, vinegar, Dijon, garlic, salt, pepper, and red pepper flakes.
- Pour glaze into pan and simmer until slightly thickened.
- Return chicken to pan and coat well in glaze.
- Top with sliced jalapeños and fresh raspberries before serving.
