Description
Sweet and savory Hawaiian-style chicken slow-cooked to tender perfection, coated in a pineapple-soy glaze. Perfect over rice for an easy, flavorful meal.
Ingredients
- 2 lbs boneless skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1 can (8 oz) pineapple chunks, drained
- ½ cup soy sauce
- ½ cup brown sugar
- 3 cloves garlic, minced
- 1 tbsp cornstarch + 2 tbsp water
- 1 red bell pepper, thinly sliced
- ½ tsp ground ginger
- Salt & pepper, to taste
- Cooked rice, for serving
- Green onions & sesame seeds, for garnish
Instructions
- Place seasoned chicken in the slow cooker.
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger. Pour over the chicken.
- Add pineapple chunks and red bell pepper. Cover and cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
- Remove chicken from the slow cooker. Mix cornstarch with water and stir into sauce. Cook for 15 minutes until thickened.
- Return chicken to the sauce, coat thoroughly, and cook 5 minutes more.
- Serve over cooked rice and garnish with green onions and sesame seeds.
Notes
- Can use chicken thighs for extra juiciness.
- Adjust brown sugar for sweetness preference.
- Leftovers keep well in the fridge and can be reheated easily.
