Description

Sweet and savory Hawaiian-style chicken slow-cooked to tender perfection, coated in a pineapple-soy glaze. Perfect over rice for an easy, flavorful meal.


Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • 1 can (8 oz) pineapple chunks, drained
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp cornstarch + 2 tbsp water
  • 1 red bell pepper, thinly sliced
  • ½ tsp ground ginger
  • Salt & pepper, to taste
  • Cooked rice, for serving
  • Green onions & sesame seeds, for garnish


Instructions

  1. Place seasoned chicken in the slow cooker.
  2. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger. Pour over the chicken.
  3. Add pineapple chunks and red bell pepper. Cover and cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
  4. Remove chicken from the slow cooker. Mix cornstarch with water and stir into sauce. Cook for 15 minutes until thickened.
  5. Return chicken to the sauce, coat thoroughly, and cook 5 minutes more.
  6. Serve over cooked rice and garnish with green onions and sesame seeds.

Notes

  • Can use chicken thighs for extra juiciness.
  • Adjust brown sugar for sweetness preference.
  • Leftovers keep well in the fridge and can be reheated easily.
