Ingredients

  • For the Chicken
  • 4 boneless, skinless chicken breasts
  • 3 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp lime zest
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • For the Rice
  • 1 cup jasmine or basmati rice
  • 2 cups chicken broth
  • For the Avocado Mix
  • 2 avocados, diced
  • 1 small red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp olive oil
  • For Serving
  • Lime wedges, for garnish


Instructions

  1. Whisk honey, lime juice, lime zest, garlic, cumin, salt, and pepper to make the marinade.
  2. Add chicken to a resealable bag, pour marinade over, and marinate 30 minutes to 2 hours.
  3. Rinse rice and cook in chicken broth according to package instructions (about 15 minutes).
  4. Preheat grill to medium-high heat. Grill chicken 6–7 minutes per side until cooked through.
  5. Mix diced avocado, red onion, cilantro, and olive oil in a bowl.
  6. Assemble stacks: rice first, then sliced chicken, topped with avocado mixture.
  7. Serve with lime wedges and enjoy.
