Ingredients
- For the Chicken
- 4 boneless, skinless chicken breasts
- 3 tbsp honey
- 2 tbsp fresh lime juice
- 1 tbsp lime zest
- 2 cloves garlic, minced
- 1 tsp ground cumin
- Salt and pepper, to taste
- For the Rice
- 1 cup jasmine or basmati rice
- 2 cups chicken broth
- For the Avocado Mix
- 2 avocados, diced
- 1 small red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 tbsp olive oil
- For Serving
- Lime wedges, for garnish
Instructions
- Whisk honey, lime juice, lime zest, garlic, cumin, salt, and pepper to make the marinade.
- Add chicken to a resealable bag, pour marinade over, and marinate 30 minutes to 2 hours.
- Rinse rice and cook in chicken broth according to package instructions (about 15 minutes).
- Preheat grill to medium-high heat. Grill chicken 6–7 minutes per side until cooked through.
- Mix diced avocado, red onion, cilantro, and olive oil in a bowl.
- Assemble stacks: rice first, then sliced chicken, topped with avocado mixture.
- Serve with lime wedges and enjoy.
Notes
- Do not over-marinate chicken beyond 2 hours to prevent toughness.
- Use ripe but firm avocados for best texture.
