Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 tbsp fresh lime juice (plus more for serving)
  • 1 tbsp avocado oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder (or 2 cloves minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup sweet corn kernels
  • 1/4 cup sliced red onion
  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 1/2 cup crumbled Cotija cheese (plus extra for topping)
  • 3 cups cooked rice
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. In a bowl, mix lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper. Toss chicken to coat and marinate 15–30 minutes.
  2. Heat a skillet over medium-high heat. Sear chicken 8–10 minutes per side until golden and fully cooked. Rest 5–10 minutes, then slice.
  3. In a bowl, combine corn, red onion, sour cream, mayonnaise, Cotija cheese, and a pinch of chili powder. Season with salt, pepper, and lime juice.
  4. Warm cooked rice in the microwave with a splash of water until fluffy.
  5. Assemble bowls with rice, sliced chicken, and street corn mixture.
  6. Garnish with extra Cotija, fresh cilantro, and lime wedges. Serve immediately.
