Ingredients
- 4 boneless, skinless chicken thighs
- 1 tbsp fresh lime juice (plus more for serving)
- 1 tbsp avocado oil
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder (or 2 cloves minced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup sweet corn kernels
- 1/4 cup sliced red onion
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1/2 cup crumbled Cotija cheese (plus extra for topping)
- 3 cups cooked rice
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a bowl, mix lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper. Toss chicken to coat and marinate 15–30 minutes.
- Heat a skillet over medium-high heat. Sear chicken 8–10 minutes per side until golden and fully cooked. Rest 5–10 minutes, then slice.
- In a bowl, combine corn, red onion, sour cream, mayonnaise, Cotija cheese, and a pinch of chili powder. Season with salt, pepper, and lime juice.
- Warm cooked rice in the microwave with a splash of water until fluffy.
- Assemble bowls with rice, sliced chicken, and street corn mixture.
- Garnish with extra Cotija, fresh cilantro, and lime wedges. Serve immediately.
