Ingredients

  • 2 cups pancake mix
  • 1 lb breakfast sausage links
  • 4 large eggs
  • 2 cups whole milk (or almond milk)
  • 1/2 cup maple syrup
  • 1 cup shredded cheddar cheese (or mozzarella)
  • Non-stick baking spray


Instructions

  1. Cook sausage links over medium heat until golden brown. Allow to cool slightly, then slice into bite-sized pieces.
  2. In a mixing bowl, whisk together pancake mix, milk, and eggs until smooth. Batter should be thick but pourable.
  3. Preheat oven to 350°F (175°C). Grease a baking dish with non-stick spray.
  4. Pour half of the pancake batter into the dish. Layer with half the sausage and half the cheese.
  5. Repeat layers with remaining batter, sausage, and cheese. Pour any leftover batter on top.
