Description

Delightful and refreshing cookies that melt in your mouth with a zesty lemon flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon finely grated lemon zest (optional, for glaze)


Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat butter with powdered sugar until pale and fluffy.
  3. Mix in lemon juice, lemon zest, and vanilla extract until combined.
  4. Whisk together flour, cornstarch, and salt in a separate bowl. Gradually add to wet ingredients, mixing until soft dough forms.
  5. Scoop tablespoon-sized portions of dough, form into balls, and arrange on the baking sheet. Flatten slightly with fingertips.
  6. Bake 10–12 minutes until cookies are just set and still pale. Cool on baking sheet for 5 minutes, then transfer to wire rack.
  7. Whisk powdered sugar with lemon juice for glaze. Add lemon zest if desired.
  8. Drizzle or dip each cookie with glaze and let set for 15 minutes before serving.
