Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon finely grated lemon zest
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
- 1 teaspoon finely grated lemon zest (optional, for glaze)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, beat butter with powdered sugar until pale and fluffy.
- Mix in lemon juice, lemon zest, and vanilla extract until combined.
- Whisk together flour, cornstarch, and salt in a separate bowl. Gradually add to wet ingredients, mixing until soft dough forms.
- Scoop tablespoon-sized portions of dough, form into balls, and arrange on the baking sheet. Flatten slightly with fingertips.
- Bake 10–12 minutes until cookies are just set and still pale. Cool on baking sheet for 5 minutes, then transfer to wire rack.
- Whisk powdered sugar with lemon juice for glaze. Add lemon zest if desired.
- Drizzle or dip each cookie with glaze and let set for 15 minutes before serving.
