Easy Pulled Beef Taquitos – Crispy & Flavorful! Perfect for snacks, parties, or a quick meal!


Ingredients

  • 2 cups cooked shredded beef (leftover roast or brisket works great)
  • 810 small flour or corn tortillas
  • ½ cup shredded cheddar or Monterey Jack cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • Olive oil or cooking spray for brushing
  • Optional: sour cream, salsa, guacamole for serving


Instructions

  1. Prep the Beef: In a bowl, mix shredded beef with cumin, chili powder, garlic powder, salt, and pepper. Stir in shredded cheese.
  2. Assemble Taquitos: Warm tortillas slightly to make them pliable. Spoon a small amount of beef mixture along one edge and roll tightly.
  3. Bake or Air Fry: Place rolled taquitos seam-side down on a baking sheet lined with parchment. Lightly brush or spray with oil. Bake at 400°F (200°C) for 12–15 minutes, or until golden and crispy. (Air fryer: 10–12 minutes at 375°F / 190°C, flipping halfway.)
  4. Serve: Remove from oven and serve warm with sour cream, salsa, or guacamole.
