Ingredients

  • 2 ribeye steaks (about 1 inch thick)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter (for sauce)
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • 1/4 tsp smoked paprika (optional)


Instructions

  1. Pat steaks dry and season generously with salt and pepper.
  2. Heat skillet over medium-high heat and add olive oil.
  3. Sear steaks for 3–4 minutes per side for medium-rare (adjust to preference).
  4. Add butter, smashed garlic, and herbs. Baste steaks with melted butter.
  5. Remove steaks and let rest for 5–7 minutes.
  6. In same skillet, melt butter over medium heat for sauce.
  7. Add minced garlic and sauté for 1 minute until fragrant.
  8. Pour in heavy cream and bring to a gentle simmer.
  9. Stir in Parmesan, Dijon mustard, paprika, salt, and pepper.
  10. Cook until sauce thickens slightly.
  11. Slice steak and serve topped with creamy garlic sauce.
