Ingredients
- 2 ribeye steaks (about 1 inch thick)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 garlic cloves, smashed
- 2 sprigs fresh rosemary or thyme
- Salt and black pepper to taste
- 2 tbsp unsalted butter (for sauce)
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 1 tsp Dijon mustard
- Salt and black pepper to taste
- 1/4 tsp smoked paprika (optional)
Instructions
- Pat steaks dry and season generously with salt and pepper.
- Heat skillet over medium-high heat and add olive oil.
- Sear steaks for 3–4 minutes per side for medium-rare (adjust to preference).
- Add butter, smashed garlic, and herbs. Baste steaks with melted butter.
- Remove steaks and let rest for 5–7 minutes.
- In same skillet, melt butter over medium heat for sauce.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer.
- Stir in Parmesan, Dijon mustard, paprika, salt, and pepper.
- Cook until sauce thickens slightly.
- Slice steak and serve topped with creamy garlic sauce.
