Description

A creamy and flavorful one-pot Cajun Chicken Alfredo Orzo loaded with tender chicken, bold spices, bell peppers, and spinach in a rich Parmesan cream sauce.


Ingredients

  • 2 chicken breasts
  • 2 tsp Cajun seasoning
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 2 cups chicken broth
  • 1 cup bell peppers, chopped
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 2 cloves garlic, minced


Instructions

  1. Season chicken with Cajun seasoning and cook in oil until golden and done. Remove and set aside.
  2. Sauté bell peppers, then add garlic.
  3. Stir in orzo and coat with mixture.
  4. Add chicken broth, simmer covered until orzo is tender.
  5. Stir in cream and Parmesan until creamy.
  6. Slice chicken and return to pot.
  7. Add spinach and cook until wilted.
  8. Serve hot with extra Parmesan.

  • Add more broth if sauce becomes too thick.
